No. Connoisseurs will tell you that olive tapenade, like wine, varies greatly in taste, colour, texture and quality from one product to the next. The variations are caused mainly by differences in the olives (cultivar, ripeness and quality), the process followed, and the influence of the maker.
As with wine making, curing olives is a natural process managed by the maker. The resulting product bears the maker's imprint, to the extent that no two people who cure olives picked in the same orchard, will produce cured olives of the same flavour, colour, texture and quality. When tapenade is made, the process is extended after curing, and further variation is likely in the final product.
Needless to say, recipes that rely on a given quantity of ' black ( or green ) olives' for tapenade to be made in the kitchen, cannot have a predictable result unless the same olives are used every time. The characteristics of the cured olives used, their flavour, texture, colour and quality, will be the main determinants of the nature and grade of the resultant tapenade.
Our process has been standardised and we take great care to produce tapenade that is consistent, and of a superior quality. The benefit of having had the same maker since our inception in 2001, has contributed to our success in this regard, providing our loyal cusomers with tapenade consistently made to the high standard which they have come to expect from us.
A good wine cannot be made from poor grapes, and good olive tapenade can similarly not be made with inferior olives. We select only the best Mission olives from the Paarl area of the Western Cape, cure them unhurriedly, and then take pride in making a superior olive tapenade, sought-after, and enjoyed by many olive lovers.
